Berry Oat Crumble Bars

I told you I have been baking up a storm since the cold weather hit. Here's another recipe that was so delicious I had to share. I whipped up a batch to take over to my neighbor as a thank you. And it's a good thing too...they were so yummy I wanted to eat them all!

Berry Oat Crumble Bars

3/4 cup butter
2 cups flour
2 cup brown sugar
1 cup oats
1/2 cup coconut
1/4 teaspoon salt
about 1 cup jam (raspberry and cherry are my favorite)

Melt butter in microwave. Combine dry ingredients. Add butter and mix until crumbly. Press half of the mixture into a greased 8x8 baking pan. Spread the jam evenly over the crust, then press the remaining mix on top. Bake at 350 degrees for about 30 minutes, until golden brown on top. Cut into squares, cool and serve.

I was thinking that apple butter would be delicious in place of the jam. Then they would be like apple crisp bars! Mmmm....

  1. I'll definitely be trying this recipe. Thanks!

  2. @Anne They really ARE delicious! When you make them, let me know how you like them!
