Whole Wheat Blender Pancakes
1 cup clean whole wheat
1 1/2 cups milk
1/2 cup vegetable oil
1 egg
3 teaspoons baking powder
2 tablespoons sugar
1 teaspoon salt
Blend 1 cup of milk with wheat for 2-3 minutes*. Add remaining milk and blend for 2-3 minutes more*. Add the rest of the ingredients and pulse until combined. Cook on a medium skillet until golden brown.
* With the Blendtec, just add the wheat and all the milk at once and blend until smooth. It goes really quick… maybe one minute?
I am telling you, everyone in our family loves these pancakes!

Oh my goodness, your daughter is gorgeous! I am wondering if you think it would work as well if I substituted coconut oil for the vegetable oil. I know it usually works the same, but in an occasional recipe, it gets weird. Also, thanks for the awesome chance to win a great blender! My husband and I have been NEEDING a new one for a while, but like you said, you have to spend a good amount to get a good one, since we don't have a lot to spend, we have been holding off. :/ My blender sucks. 🙁
