Caramel And Spice Cookies

Fall is slowly starting to show itself around here. I am excited for changing leaves, sweatshirt weather and best of all, fall baking! Here’s a new recipe I made up to celebrate the arrival of my favorite season. It’s a chewy, soft cookie bursting with cinnamon spice and delectable caramel frosting to top it all off. And best of all, you use a cake mix, so it’s really easy!
For the cookie:
1 spice cake mix
2 eggs
1/3 cup oil
Dump all ingredients into a large mixing bowl. Mix together with a wooden spoon until smooth. The dough is supposed to be very thick. Roll into balls the size of golf balls and place on an ungreased cookie sheet. I made 17 balls total and had to do two batches. Bake at 350 degrees for 8-10 minutes, or until no longer shiny on top.

For the frosting:
12 Kraft caramels, unwrapped
1 teaspoon water
4 Tablespoons butter, softened
1/2 cup + powdered sugar

Melt the caramels and water together over a double boiler or carefully in the microwave (do 20 seconds at a time and stir in between). Let cool. Add butter and powdered sugar and beat with an electric mixer until smooth and fluffy. Add more powdered sugar if needed to achieve desired consistency.

Frost cooled cookies and then try not to eat them all at once.
