2 cans chickpeas (also known as garbanzo beans), rinsed and drained
2 tablespoons olive oil
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon cayenne pepper (less if you’re a wimp like me)
1/2 teaspoon salt plus more for sprinkling
Mix ingredients evenly in a bowl. Place a piece of tin foil down on a baking sheet and spread the chickpeas out evenly. (Tin foil makes clean up a breeze!) Bake at 400 degrees for 30-40 minutes. Make sure you let them get nice and crunchy. They are better that way!
And just more incentive to try this snack, 1 cup of chickpeas boasts 12 grams fiber, 15 grams protein, 26% of your daily iron and 269 calories. Not bad, not bad!

I make a version of these and love the crunchiness. My mom would make these when i was a child as well.

My father-in-law who was a farmer, one of the crops he grew was chickpeas. I was visiting last week and he asked me what I did with chickpeas, I rattled off numerous recipes, falafel, hommus dip, salads, casseroles etc,. He asked me to give him a few recipes, that night I wrote some out and gave them to him over breakfast in the morning. This was when my mother-in-law asked what the recipes were and I told her, her responce, those bags of chickpeas had been in the shed for over four years, at this I turned to him and said "you never told me that" just throw them out. I love crunchy chickpeas, fresh of course.
