Whole Wheat Blender Pancakes

I am excited to share one of our family's most favorite recipes today. I am actually kind of surprised that I have never posted it before. I even searched my blog to make sure I hadn't. Ha!

We probably make whole wheat blender pancakes every other week. Before I go any further, forget everything you ever thought about whole wheat pancakes, because these are different! They are light and fluffy, but they have that delicious, nutty, hearty flavor that comes with whole grains. When we have made box mix pancakes, they are so unfilling and bland in comparison. These blender pancakes are so much more nutritious because you start with whole wheat kernels so you get 100% of the nutrition found in each little grain. Have you purchased whole wheat kernels before? They look like this:


You can find wheat in the bulk bins at stores like Winco or in the baking aisle at most grocery stores. I buy mine by the 50 lb bag and use it as emergency food storage. 

The original recipe takes 4-6 minutes of blending and sometimes still leaves a course texture. With my Blendtec, the wheat was ground faster than I could add the other ingredients in and the batter was perfectly smooth. And I thought this recipe couldn't get any better!


Whole Wheat Blender Pancakes

1 cup clean whole wheat
1 1/2 cups milk
1/2 cup vegetable oil
1 egg
3 teaspoons baking powder
2 tablespoons sugar
1 teaspoon salt

Blend 1 cup of milk with wheat for 2-3 minutes*. Add remaining milk and blend for 2-3 minutes more*. Add the rest of the ingredients and pulse until combined. Cook on a medium skillet until golden brown.

* With the Blendtec, just add the wheat and all the milk at once and blend until smooth. It goes really quick... maybe one minute?

I am telling you, everyone in our family loves these pancakes!

  1. Oh my goodness, your daughter is gorgeous! I am wondering if you think it would work as well if I substituted coconut oil for the vegetable oil. I know it usually works the same, but in an occasional recipe, it gets weird. Also, thanks for the awesome chance to win a great blender! My husband and I have been NEEDING a new one for a while, but like you said, you have to spend a good amount to get a good one, since we don't have a lot to spend, we have been holding off. :/ My blender sucks. :(

  2. I don't have a lot of experience cooking with coconut oil, but I think it would work. I hope you win the blender! I know all too well about cruddy blenders. Good luck!
