Crunchy Roasted Chickpeas

If you’ve been reading my blog this week, then you know I’m on a  really hard, strict, annoying diet. Today I came across a healthy recipe that was so good, I took a few bites, then immediately got my camera out. I’m sitting here writing up this post and eating because it is too good not to share.
Are you on a diet and craving potato chips? Do you just want something new to shake things up? I’m finding that food boredom hits pretty fast when you are trying to eat healthy. So here’s a new recipe for all you health-conscious folks out there. I hope it brings as much guilt-free pleasure to you as it did to me.

2 cans chickpeas (also known as garbanzo beans), rinsed and drained
2 tablespoons olive oil
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon cayenne pepper (less if you’re a wimp like me)
1/2 teaspoon salt plus more for sprinkling

Mix ingredients evenly in a bowl. Place a piece of tin foil down on a baking sheet and spread the chickpeas out evenly. (Tin foil makes clean up a breeze!) Bake at 400 degrees for 30-40 minutes. Make sure you let them get nice and crunchy. They are better that way!

And just more incentive to try this snack, 1 cup of chickpeas boasts 12 grams fiber, 15 grams protein, 26% of your daily iron and 269 calories. Not bad, not bad!


  1. My father-in-law who was a farmer, one of the crops he grew was chickpeas. I was visiting last week and he asked me what I did with chickpeas, I rattled off numerous recipes, falafel, hommus dip, salads, casseroles etc,. He asked me to give him a few recipes, that night I wrote some out and gave them to him over breakfast in the morning. This was when my mother-in-law asked what the recipes were and I told her, her responce, those bags of chickpeas had been in the shed for over four years, at this I turned to him and said "you never told me that" just throw them out. I love crunchy chickpeas, fresh of course.
