Cheater Soft “Gingerbread” Cookies

I love gingerbread cookies at Christmas time, but I don’t always have some of the special ingredients like molasses or ginger on hand. And sometimes I’m just flat out lazy. So I came up with the easiest possible way to get that spicy holiday flavor I crave.

Want to know my secret? I use a cake mix! A spice cake mix, to be exact.

Here’s my super simple recipe.

Cheater Soft “Gingerbread” Cookies

1 spice cake mix
2 eggs
1/3 cup vegetable oil

Mix ingredients together until evenly combined. The batter will be really thick. Roll into 1 inch balls and bake at 350 degrees for about 8 minutes, or until the tops are no longer shiny. Makes about 18 cookies.

I like to top mine with cream cheese icing and wow… so good.

Cream Cheese Frosting

4 oz cream cheese, softened
1/4 cup butter, softened
1/2 cup powdered sugar
1/2 teaspoon vanilla
