Boo! Flat, sad little cookies! Let’s just put this into perspective:
So disappointing.
To be fair to the original poster, baking is a finicky art and maybe I did something wrong or could have fixed them by adding something to the dough or baking a different way. Who knows. But I hate finicky recipes and I am sad, sad, sad that my dreams of homemade vanilla wafers fell flat (literally).
The good news is that the cookies tasted great even though they were nothing like a vanilla wafer. So I used the remaining cookie dough and made bar cookies. Talk about making lemonade when life gives you lemons. They were yummy!
Turned out to be a cross between butter cookies and sugar cookies. Yum!

Remember you're at a much higher altitude in Idaho Falls. I had to tweak recipes because of that!

I wonder if it was because you used butter rather than shortening? I am sure that butter was what was called for, but in my experiences with cookies, making them with butter makes them flat (not necessarily bad) and if I want them to hold their shape better, I need to use shortening (crisco). Course, I am not at a high elevation either, so I can't comment on that.

I think you would need to adjust according to elevation. And adjust the time according to the size of the cookie. In this case you would want to have them a little more cooked than say sugar cookies or chocolate chip cookies. I would try a mix of half crisco half butter and see if that works.
